Got a few large poblano peppers, some left over grits, and some 16 ct head on fresh shrimps...
Plan to stuff the peppers with the grits and shrimp and top with pepper jack cheese... Grilled to perfection on my fathers day gift.
They turned out fantastic. Will cook again.

I’d cook first. Only looking for a little color on the peppers, and that won’t take long. Don’t want to have to deconstruct and restuff after the fact.

I made a pasta casserole. Marinara, polenta, mushrooms, arugula, mac noodles, shredded cheese.. baked for a couple hours. Topped with nutritional yeast

Today I cooked a pot of Navy beans with smoked green onion sausage. Had some really ripe Cherokee purples so a salad with cucumber and red onions seemed right. And while out running an errand I stopped and picked up some catfish for thin fried catfish which threw the meal over the top.
Not real fancy but this was one fantastic meal!!!
