Never done it myself. Doing some crawfish tomorrow and wanted to maybe do some peanuts on Saturday. Where do I start?

Start in the fall when green peanuts are available.

If you don't, you will be boiling them until the fall.

Seriously, you can't do boiled peanuts without green peanuts. And green peanuts don't exist outside of the fall in the south...to my knowledge

Mother nature is a cruel mistress like that.

FYI, in the fall boil a lot of extras and freeze them. Then in the spring throw them in the boil. Won't be much of a difference.

You can start finding green peanuts in July.
But I agree. Wait for green peanuts.

Tried to do this last year without green peanuts. Was a mistake. Won't do them outside of fall now.

This right here. I used to boil them outside on my sideburner because getting a low simmer for a few hours would stink up the house for 3 days. Now I use the pressure cooker and before I pop the release I take it outside. I don't like them mushy but don't like them firm either. About 30 minutes is perfect in the pressure cooker.

I also use Everglades seasoning when I don't want spicy ones.
