I didn’t want to make it in the black iron skillet. So I made muffins. Used this recipe:

Except I broiled the corn for 10 minutes, and used 1/2 and 1/2 honey to maple syrup.











Next time I’d use some bacon grease on the corn to try and get them to brown more.

Martha White recipe on the bag but add an extra egg.

Sugar does NOT belong in cornbread. If you want a dessert make a cake.

They tasted like a corn muffin and not cornbread. I made something, just not cornbread.

Old man from central Texas showed me his secret for making his cornbread and I follow it ever time I make it.

Use whatever recipe for the batter that suits you, just don't over beat it when mixing. I use a 10 in. cast iron frying pan and will heat it up as my oven preheats. When the pan is hot I'll put about 1/4 cup of bacon grease in the pan and make sure it covers the bottom and is sloshed around to cover the sides of the pan.

I let the grease start to smoke a bit then pour the cornbread batter in the pan so it sizzles hard and starts to cook on the bottom and sides for about 1 minute on the stove before putting it in the oven to finish off.

When done, the cornbread comes out the pan with ease and has a nice crispy bottom and side crust.


And I love to add diced up jalapeno peppers to my cornbread mix for a bit of a kick.

You probably know the series of 40+ crime novels Robert B. Parker and Ace Adkins wrote that featured the character "Spencer", a detective who lives in Boston.

Parker is dead now and Ace Adkins (an Ole Miss author) now writes the books under contract for Parker's estate. He does a good job writing in the style of Parker.

Anyhow, Spencer, whose first name is never given in any of the novels, loves Corn Muffins.

I always laugh when Parker mentioned them. I think h had a checklist when he wrote that included "Spencer has corn muffins". Until he mentioned Corn Muffins, his sidekick Hawk, and Spencer's Psychiatrist girlfriend Susan Silverman, He had not written a proper Spencer Novel.

Parker also wrote the Jessy Stone Novels. He was a really good writer, who write over 70 books.
