I threw a brisket on the smoker last night at 8:00 pm. Spritz it every hour until I went to bed at 11:30.
Had my alarm set for 12:30 so that I could wake up every hour to spritz it.
Well, I had one too many drinks and turned off the alarm. My wife didn’t even nudge me to get me up.
So I went 6 hours without spritzing.
Woke up at 5:30 and finally spritz then wrapped the point.
Is this brisket going to be ruined?

TLDR - passed out and didn’t spritz the brisket for 6 hours.

*Update* for the most part, the brisket came out moist. The ends are a little drier than what I’m use to and the bark is a little burnt.
A lot of different opinions on spritzing and wrapping but I’ve always had good results when don’t forget spritz.

Most of the briskets I cook do not get "spritzed". I am not in a contest when cooking at home, so it's all about flavor at that point. If your temp was stable, you'll be good to go, man!

I’ve always spritz so I’m just a bit nervous since I went 6 hours without doing so. lol

Will do. Point is wrapped but still waiting on the flag to come to temp.

You are fine. A good trimmed brisket doesn’t need spritz. There is plenty of fat in a brisket to not have it dry out during the cook.

I would be more concerned that you waited so long to wrap. I wrap at about 165 F or about 4-5 hours in. Also why wrap, the point and not the flat? The point has way more fat. The flat is the part that will dry out.

Wrapped the point? Just the point? Huh?

You don’t need to spritz and you don’t need to wrap.

So a brisket that isn’t trimmed good needs to spritz?

Don't listen to these guys, that brisket is ruined. Don't attempt to cut it, it will be like the turkey on Christmas Vacation.

Just put it out by the curb and let me know, I'll make sure it doesn't infect your garbage can with the horrific smell of un-spritzed brisket.

I personally rather brisket unwrapped, the bark just has better texture to me.

Everyone has their taste though.

I normally wrap, but my point is, you don’t have to.

Have you ever done an unwrapped brisket?

At one time Texans wouldn't bbq hog, they are other ways in the world. You should branch out some.

I wrapped the point at 165. Still waiting on the flag to reach temp to wrap.

of course but I don't do brisket very often, too much meat (twss)

I don't wrap any pork.

I'll take a Tejas, Pinkerton or Snow's brisket over anything in Nola, every day.

yes I have been to all three.

You can not wrap, wrap in foil, wrap in paper, or use a foil boat. If you cook it right, all methods work just fine. There’s not one correct method.
