You can grab a lime and cut it and have wedges ready to go in 60 seconds. Ice doesn’t work that way. Spheres are such a hassle to make properly and take up a lot of space to store. It’s a lot different than just cutting fruit or filling your ice well.

The molds to make clear ice do take up a lot of freezer space. My truecubes mold is 7”x6”x6” to make 4 cubes and it takes 18-20 hours to make them. There may be a better commercial mold for restaurants, but I can see it being a hassle. I do agree you should be notified of the charge when asking for a large cube or sphere though.

How long does it take to pour water into a mold and set it into a freezer? What is the “such a hassle” part?

You can’t up charge on something because it takes us space in your freezer

That’s not really how you make spheres. They do have some but they don’t really work that well. Some bars are just buying them now.

And then if you want them to be clear and nice it takes more work.

Sure you can.

It’s an ingredient just like any high end food ingredient that takes time or effort to procure. Do some research next time.

The sphere making takes time to make block ice and then you have to use a $3000 ice press to make it into a sphere

yes it’s a gigantic PIA
however if you are going to market as a premium whiskey bar (which I believe our friend wick does) then you have to have the spheres

1.50/drink is a fricking bargain compared to the hassle behind the bar

not to speak for wick, but…if I order an expensive whiskey I expect an ice sphere, and I suspect most of not all his expensive whiskey buyers expect the same. It’s kinda part of the deal

if I order an old fashioned and I get ice cubes (for example) I’m going to send it back

Customers who know what’s going on won’t have an issue with it.

Ronnie from the westbank that get hits with a $2 ice sphere charge is the one that will probably get worked up about it.

They expect to be charged for a sphere?

Im an “expensive” whiskey drinker in a restaurant and always have a large cube, I’ve never seen a charge for it in all my years. Hence the curiosity
