A thread on TigerDroppings, an LSU message board with an active dining section, took up the Beard honor. It started out nice. And then someone turned to Turkey and the Wolf’s always obscene Instagram feed.

“Someone wrote, whoever runs Turkey and the Wolf’s Instagram feed is the worst, try-hard human on the planet,” Hereford said. “I was like, damn, that’s exactly how I hoped I didn’t come off, even though I know I sort of did.”

By the end of that week, Hereford promoted two cooks to sous chefs, making them managers. He ended dinner and started closing at 5 p.m. Salaries went up. More employees got health insurance.

“The restaurant hasn’t changed, just the amount of people that read about it has changed,” he said.

The number of people who go to it also changed, and that constant crowd keeps some locals away.

“I can see why it would be frustrating for someone if you just came in for a sandwich,” he said. “It makes perfect sense not to stand in that line for that sandwich.”

Even if Turkey and the Wolf has become a place Hereford could not have imagined, he wants to be clear that he’s grateful for this year.

“You can’t complain about the greatest thing that ever happened to you,” he said.

And he knows it might not last. Next year, or maybe the year after, the crowds could dwindle away.

“Then we end up being the restaurant we always intended to be,” he said. “If that’s the worst case scenario, it’s not that bad.”

He kind of gets it, I think.

I had never heard of this place until I watched the episode of Someone Feed Phil on Netflix when he went to New Orleans. Looks like an interesting spot trying different stuff. Seems like it could be hit or miss, but I definitely want to try it.

They make good sandwiches, a good salad, etc. That's it, no one should expect more.

LoL. Took some friends there right after they opened one afternoon before a Saint's game. I misjudged my friends palates I guess because I really liked the place and they couldn't stand it. At the time, they made fun of me for taking them there. Now it is famous and I keep hearing them tell people how they ate there back in the day.
