I saw they had some beef briskets at Calandro's that I want to try. I am not going to smoke it.

Would you suggest the crock pot or oven cook this?

Oven. Roast for an hour or so at 350 in an uncovered roaster. Drop the temp down to 300. Add about an inch of water or beef stock, cover and let go 4-5 more hours.

For the love of God, smoke it. The best cut of meat for smoking, IMO, is a good beef brisket. Done right it's transcendent.

I have had many fine briskets oven cooked. Slather one with Woody's Cook-in sauce and cook really slow in the oven sealed. I would never approach 300 unless pushed for time though. The absolute best way is to put the meat on that broiler deal that comes with ovens, then foil. That way, the meat is not sitting in liquid toward the end of the cook.
