I'm not kidding at all on this. If you take it out of the water bath and throw it straight on direct heat, you'll overshoot temp 100% of the time. Chilling before eliminates this, and the airfryer delivers a deep dark crust. Hate on it all you want, you could put pictures of this tri tip in a magazine, and it tastes even better than it looks.

i do this as well sometimes, but i don't do it because it's the best way to eat tri tip. i do it because i don't always want to deal with a huge brisket (or even a flat); it's more of a convenience thing. tri tip brisket style comes out slightly drier than a flat, but tastes just as good.
to answer the OP, best way to cook tri tip is smoked to 110 or so, then rested and seared.

Tri tip smoked like a brisket was real good. Better than the reverse sear.
