Toppings for sausage poboy

For a good sausage poboy, what do you consider for toppings? Jack millers? Mustard? Kraft? Cattlemans?
Do you put lettuce and tomato?

I guess we can also discuss favorite smoked sausages.

My go to sausage is from guillory's in pineville or pine prairie. Honorable mention from t-bays in basile. I either go pure jack millers or pure mustard depending on my mood. No extra fixins.

I toast the poboy bread if it’s the regular soft kind from the grocery store.

Top the sausage with grilled onions and sometimes a bit of mozzarella. Put it back in the broiler a bit to melt the cheese.

Hamburger patty in a bun with nothing but Jack Miller's reminds me of the ball park. Frito Pie in a crackebox gym watching high school basketball is also up there in childhood memories.

Pull a link off the pit, put jack millers on a slice of Evangeline Maid bread, put link on bread, small drizzle of mustard on top.
