Too Saucy Pasta Bar (Highland at Jefferson)

Stumbled onto this place last week at the corner of Jefferson and Highland.
The owner said it's only been open for 8 weeks.
I love the concept.
Pick your sauce
Pick your protein
Pick your veggies
Pick you pasta
And it's assembled and cooked while you wait. It's sort of a Lit Pizza assembly line type of operation.
Had the penne with marinara,chicken thigh meat, mushrooms,garlic and onions.
Tasted pretty good. Got a good bit of food. Price with drink was roughly $10 a person.
Haven't seen it discussed here.

The union used to have joint like this that I enjoyed as a student

Looks like a decent concept. I could imagine it making it in Vegas, but with a much improved decor, a higher end food ingredients display area, a hipper, rustic italian looking menu, gas burners (and more of them), add sandwiches, a small selection of wine and beer and increase the average price to $12. And I would probably call it an Osteria.
No, it's not a diner. Not at all.
I recommend: We are a fast casual restaurant. Still not great, but more accurate and descriptive.
And I would have gone with pastaria instead of pasta bar.

There are a couple of nicer apartment complexes in that area so there's always drive by traffic and if you don't want to cook, I'd think it's a fast, moderately priced option that offers variety.. Plus, younger guys and girls (who are the majority of apartment residents) that run or work out need the extra carbs. So there's a good market to reach there.
