Wagyu is a breed of cattle.
quote:
These four varieties are the only true strains of Wagyu cattle:
Japanese Black: Originally raised as work cattle, Japanese Black beef is prized for its intensive marbling.
Japanese Brown: A leaner, healthier breed of cattle, known for its light, mild taste.
Japanese Shorthorn: While also lean, Japanese Shorthorn is rich in inosinic and glutamic acid, highly prized for the savory flavor they give beef.
Japanese Polled: Similar to Brown and Shorthorn in leanness, Japanese Polled is known for a gamier texture and rich, meaty taste.
Over 90% of all Wagyu are Japanese Black strains, so when someone says “Wagyu,” they are usually referring to Japanese Black cattle.
I did not know all of these prior to this thread but it is information im passing along. LINK

In the United States, Japanese Wagyu cattle are bred with Aberdeen Angus cattle. This crossbreed has been named American Style Kobe Beef.[15] Wagyu were first competitively exhibited at the National Western Stock Show in 2012.[16] Some U.S. Wagyu breeders have full blooded animals directly descended from original Japanese bloodlines, and are registered through the American Wagyu Association.[17]

Wagyu is a breed - either Black, Polled, Brown and Shorthorn.

Shows you how much I know. I always thought wagyu was an American version of Kobe. Prime is about all I need.

quote:so no. Black, Polled, brown and shorthorn are breeds. Wagyu is the group of breeds. so when those are crossbred with angus to get American wagyu, you are getting fake wagyu like i said.
Wagyu is a breed - either Black, Polled, Brown and Shorthorn.
anyway we are arguing semantics. i so want to try a Snake river Brisket

There are 100% full blooded Wagyu beef cattle in the US.
So there's that.

Seems like a bitch to cook and impossible to eat.
Tomahawks go on sale at Kroger a lot. I get them every time. Cook for a while well away from the charcoal on a Webber kettle. Monitor temp. Sear at end. Fantastic.

any restaurant or breeder that tries to sell you "american style kobe beef" or "american kobe" doesn't deserve your money

Prime is probably what you're getting half the time you see Wagyu

Of course you can.
Make a bag the size of the tomahawk from an 11 inch roll. You'd probably have to sous vide it in a small ice chest.
I'm only partially nerdy about sous vide. My bags aren't big enough and my 3 gallon container wouldn't fit one. I suppose you could fashion a bag (or buy bigger ones) and use a larger vessel, but reverse sear in the oven or primo gets it done with easier prep.
OP, I go lower on the heat just to make sure I don't overshoot or cause additional cooking after it's out. I don't want to overcook it. Tomohawks are thicker, so that helps too. You can set the temp to whatever you want, just monitor it if you're going higher.
If you figure out how to sous vide with the bone, let it go at least 2 hours at your desired temp.
Posted on 7/12/19 at 9:53 am to GRTiger
The bone doesn't need to be submerged. You could sous vide one normally I would think.

Yea I thought about that. Wasn't a fan of leaving the bag open. Scared I'd leave it be and it would sink and fill up.

I would still seal the bag but leave the bone part out.

Well, on this thread:
quote:
He is getting a wagyu hybrid.
How do you know?
He could be getting 100% Wagyu from any United States farm List that offers fullblood wagyu, 100% of their genetics are traceable to Japanese herds with no evidence of crossbreeding.

Wagyu is the group of breeds. so when those are crossbred with angus to get American wagyu, you are getting fake wagyu like i said.
What the hell are you talking about? If it's crossbred it has names. "High percentage Wagyu" and "Wagyu influenced beef"
