Shows you how much I know. I always thought wagyu was an American version of Kobe. Prime is about all I need.

so no. Black, Polled, brown and shorthorn are breeds. Wagyu is the group of breeds. so when those are crossbred with angus to get American wagyu, you are getting fake wagyu like i said.

anyway we are arguing semantics. i so want to try a Snake river Brisket

There are 100% full blooded Wagyu beef cattle in the US.

Tomahawks go on sale at Kroger a lot. I get them every time. Cook for a while well away from the charcoal on a Webber kettle. Monitor temp. Sear at end. Fantastic.

any restaurant or breeder that tries to sell you "american style kobe beef" or "american kobe" doesn't deserve your money

I'm only partially nerdy about sous vide. My bags aren't big enough and my 3 gallon container wouldn't fit one. I suppose you could fashion a bag (or buy bigger ones) and use a larger vessel, but reverse sear in the oven or primo gets it done with easier prep.

OP, I go lower on the heat just to make sure I don't overshoot or cause additional cooking after it's out. I don't want to overcook it. Tomohawks are thicker, so that helps too. You can set the temp to whatever you want, just monitor it if you're going higher.

If you figure out how to sous vide with the bone, let it go at least 2 hours at your desired temp.

The bone doesn't need to be submerged. You could sous vide one normally I would think.

Yea I thought about that. Wasn't a fan of leaving the bag open. Scared I'd leave it be and it would sink and fill up.

There are FB groups for meat just like the bourbon ones, we raffle off some pretty incredible meats. Won one of these not to long ago for $145.

i never said their wasnt.... But i will crawfish a bit because i didnt know 100% black has made it that far. Last time i looked into it it was less than a handful of places that had them in the US. And it was mostly for the crossbreed.
