Your list includes some things we rarely-to-never cook or want to eat, but hey, that’s what makes the world go ‘round. (Ain’t no tater tot casserole coming out of my kitchen.) Some stuff we routinely eat that’s not on your list:
—lentils: either cooked into a thick curry (with rice or naan) or thiner as a soup
—chopped greek salad, w cucumbers, cherry tomatoes, Tnuva feta, homemade croutons
—paella, with chicken and chorizo (I actually make it far more often than jambalaya)
—good cheeses (2-3 different kinds) w/bread and fruit (one of my favorite suppers of all time)
—shakshuka, or other baked/skillet egg dishes (like eggs poached in leftover creamed spinach or in a bed of leftover mashed potatoes)
—broiled Aidell’s chicken sausages (Costco sells ‘em), or same sausages diced into a veggie stir fry
—kale Caesar salad w/hardboiled eggs as the protein (and homemade croutons)
—pork tenderloins, oven roasted & flavored in various ways
My freezer is full of cooked food, so weeknight suppers often feature something defrosted that can be repurposed or rearranged....like the pasta sauce I threw together yesterday out of leftover pulled pork, half a can of frozen cento tomatoes from the freezer, some diced celery, carrot, and onion, plus some red wine.

Lol!!! Tator tot casserole is my wife’s favorite food! I have to admit that I don’t care for it but I eat it because she is so proud of it. She is from a different part of the country and it was the first thing that she ever learned how to cook. Also, the kids like it. I is basically just ground beef, cheese, tator tots and some seasonings.
The list you gave sounds good and I would eat it but do you have small children and do they eat it?

You know, I have never thought to just make a charcuterie board for the family. I could pitch it by calling it a “family lunchable” lol. It will happen soon!

No, I don’t have any small fry. But I grew up eating whatever my parents cooked, and none of us were picky eaters. So I say at least attempt to feed your children a varied diet, repeatedly. And peanut butter sandwiches are acceptable if they hate your dinner.

No meatloaf with mashed potatos?

I do everything in my power to introduce them to different foods but they are fairly finicky. Not chicken nugget and Mac and cheese only finicky but there is a lot of things that they don’t seem to enjoy. That being said, my solution is as follows. They have to eat at the same time as the rest of the family and if they don’t want what we made, they can have fresh fruit for dinner. We always keep apples, bananas, and other types of fresh fruit in the house. We all enjoy fresh fruit. I try not to offer cereal or pb&j too often because I don’t want them just diving straight into that when they need to at least try what we are having.

Sounds like a perfectly reasonable plan to me. They aren’t coerced and can exercise choice, and you aren’t a short order cook catering to everyone separately. I have a pile of nieces and nephews, all of whom are now adults. Several were raised in very kid-centric households where little Johnnys four year old aversion to green things was carried on into all aspects of household cooking. It’s completely funny to watch them discover at age 20-25 that Food X is actually delicious after having been told “but you hate it” over and over again for 15 years. Palates change.
