It's intentional to drive up demand and it works. We made as much on a Tuesday night as others did that entire day. Open on weekends and only had 2 lulls all day... 3pm and around 9pm until a certain demographic came out for that 30-minutes-till-close-pop
Staffing isn't the issue as someone else pointed out.
When myself, my sister, BIL and first cousins were there in March, we got there about 7:30, and stayed past closing. Our server made over $100 in tips that night. He was awesome!

Lunch In steakhouses is a tough sell. It’s heavy, expensive. Lots of employees for a small window to get business in and out.

It’s just food from a chain restaurant that’s pretty good. Spending more money doesn’t always mean it’s going to better than something you could find in a strip mall.
