I'm a steak man, always have been, & I love their N.Y. strip & ribeye, especially grilled. It's no doubt a staffing problem as there are more than a few restaurants here in town who can't find dependable workers for a full day of service.

Worked there in college for 4.5 years.

It's intentional to drive up demand and it works. We made as much on a Tuesday night as others did that entire day. Open on weekends and only had 2 lulls all day... 3pm and around 9pm until a certain demographic came out for that 30-minutes-till-close-pop

Staffing isn't the issue as someone else pointed out.

Thank you. They locate on expensive real estate. All the other places claim they barely pay the bills but Roadhouse holds that line. The concept of driving demand makes a lot of sense. It’s ballsy but it works for them

You would definitely know roadhouse better than I do.

But here in Georgia, lots of restaurants still have covid hours because they don't have the staff for more.

My son works an outback in roswell, ga. They run about 6 servers a night. When I was working in the 90s, we were using 14 to 16 servers.

Fun fact (IIRC). The founders of Logan's and TRH (rip) were working together to start up a steakhouse together, but couldn't agree on layout or business model so each started his own. We nearly had a world without one of the two restaurants at all.
