It’s pretty common at big boils or restaurants to go with the sprinkle method. Costs a lot of money to keep changing out water/reseason or to season all the pots when you are boiling a ton. It’s forgivable in that situation.

Wine can go with anything.

A good rose' goes great with crawfish and is a lot less flling than beer.

Why would that be forgivable? Tony’s Seafood boils in plain boiling water then soaks in room temperature seasoned water and they are the exact same every time you eat them and there is a reason they line up out the door to buy. If you are cooking them for sale you should learn how to cook.
