Until it tastes like metal! That's going to depend on acid concentration and time, among other things.
I'm not saying he shouldn't have cooked it in black iron, but was just pointing out that the tomato will leach out iron eventually.

Gotcha. I don't think I've ever had a sauce piquant that had a metallic taste to it. However I've definitely had a few jambalayas that had a strong black iron "funk" to them
