Tacos for tailgate?

I'm tired of the same old food, so this game, I'm doing a taco bar. Let's say we have 80 people, how much ground meat will I need? I usually figure 1/2 lb per person for dinners, but since its a tailgate, less?

What you ought to do is exit the Ambassador exit and go to La Morenita and get some marinated taco meat and make street tacos. Healthier, lighter, tastier and probably cheaper.

Or just get a Chuck roast or a pork butt and put it in the crockpot with some spices, onion, garlic, limes, etc.

Meat, corn tortillas, limes and salsa verde

vs.

meat, seasoning, lettuce, tomatoes, cheese, onions, salsa and flour tortillas

Prolly a pretty close call.

Do two big briskets covered in the oven with chilis, diced tomatoes, beef broth, adobo sauce, can of tomato sauce, salt and pepper. When done shred brisket, blend sauce and drain fat. You can keep warm in a crockpot and make shredded tacos.

Do carnitas or barbacoa style tacos using crock pot. Have the shredded meat, corn tortillas, cilantro, onions, limes, salsa verde.

bring a whole boston butt (or 2 to make sure you've got plenty) that you smoke the night before. i don't know if i'd offer ground beef--doesn't sound as good sitting out. pulled chicken would be another option. add some slaw, cilantro, maybe some sauce, sour cream (or greek yogurt) to go on your corn tortillas and you've got some good tacos

If all adults I would figure 1/2 per person but really depends on how long y'all eat and if you have some heavy eaters. Wil there also be snack foods?

1/2 pound per person is too much. Does 81 include women and children? Other food at tailgate?
