I cook with Crystal, Louisiana, Panola, etc and use Tabasco to flavor all foods after they are cooked.

I don't really like Tabasco...too much vinegar.
Ding Ding! I also find that most Mexican Picante type sauces have too much vinegar.

I prefer Louisiana too. The rest are all too vinagry tasting!

I prefer Crystal to Tobasco, Crystal seems to enhance flavors, but food with Tobasco just tastes like Tobasco
What is the difference between hot sauce and pepper sauce? Is there technically a specific use for each?

Crystal is a total FAKE! It "tastes" like it should be hot, but it is not hot. It's pointless. I go with Tobasco, but I typically like to experiment with different hot sauces from World Market.
The Tobasco green pepper sauce is pretty good on red beans and rice.

I agree on LOUISIANA number one over all.Crystal is leaving N.O. post hurricane if they haven't already but Tabasco DEFINATELY has its place on certain things as well. The Tabasco Chipolte is GREAT and the Tabasco Soy does some really good things for Aisan cooking and wockery.

Louisiana changed the recipe a few years back..
Before that Tabasco and Crystal were the only true original tabasco sauces..
Nothing but Tabasco pepper, vinegar and salt..
Louisiana hot sauce used to add gum to the sauce as a filler.
Now Louisiana Hot sauce is made with the traditional recipe as well..
Most other sauce have addiatives in the recipe.
I have at home Tabasco & Louisiana and serve them both.
I will not buy Crystal for personal reasons
