Survey: Amount of Heat by Dish

This is prompted by an ad I heard that mentioned "spicy jambalaya". To me, jambalaya was never one of the Cajun or Creole dishes that had a lot of spice flavor, whether you're talking about heat or herbs and such.

So I ask you to list Louisiana dishes you make that have the most heat down to those that you make with less.

For me, Boiled Crawfish and Cocktail Sauce are the ones with the most heat.

Then I'd say Sauce Picante, of whatever kind.

Next would be Crawfish or Shrimp Etouffee or Crawfish or Shrimp Creole.

Then Gumbo of whatever sort and Boudin .

Then little spice for Maque Choux.

And then Beignets or Bread Pudding.

I don't consider any of those dishes to be spicy although I love all of them

Not even Boiled Crawfish? What do you consider spicy? Boiled Crawfish is the only one I eat that is regularly too spicy to eat.

Of those, boiled crawfish is the only one I associate with spicy (depending on who boils them). Obviously loading them up with hot sauce changes that

Would have to say crawfish and crabs. Can’t think of others that should be overly spicy off the top of my head. Maybe some cracklins or jerky.
