Missing my faves at Superior Grill. Anyone have a tried and true copycat recipe for their Rice & Tortilla Soup?

that surprised me - the Highland Road location in Baton Rouge was PACKED with Bama fans Friday night

Here it is from a cookbook I found a while ago. I’ve made several times it’s spot on.

all i do is make a basic chicken soup and then add chiles, cumin, chipotles, cilantro, tortillas, and avocado

I found this one online, but I haven't tested it yet.
2 Tbsps. butter
1/2 cup diced onions
2 whole diced poblano peppers or 2-3 fresh chopped jalapeno peppers
1 cup peeled tomatoes, mashed
1 Tbsp. flour
2 12-oz. cans evaporated milk
2 lbs. grated Monterrey Jack cheese
Steps
Melt butter over medium fire.
Saute onions, peppers and tomatoes for approximately 10 minutes, until the onions are translucent.
Add the flour, stirring constantly to avoid burning.
Add the evaporated milk and cook until hot, stirring frequently from the bottom.
Once the milk is hot, add the cheese one handful at a time, stirring constantly until melted, and add the next handful.
Serve hot with chips.
Notes
If you like a milder version, use the poblano peppers; for a spicier version, use the jalapeno peppers.

Not that I recall. I regret not buying the cookbook. It included recipes from several Louisiana restaurants. I think I was still a broke student at the time. I saw the cookbook while waiting in line at a CVS. That recipe jumped out to me because I had always loved that soup.
Shreveport Superior serves both types of queso.

All their tortilla soup is is chicken soup with a few Mexican spices added. It’s a joke. The tortilla soup at La Caretta is MUCH better. Superior is a fun place but the food is mediocre at best and far too expensive.

Any chance you have their salsa recipe? I think I'd about kill for any of the following - las palmas, mis padres, tio Javi's, superior.
