Probably a dumb question, but I love spicy peppers and make flakes to season meats out of a lot of my habs, ghost, and scorpion crops. I cut up the peppers and roast at 115 degrees or so for 8 hours or until dehydrated, then throw in a processor.
How do you process peppers to get a fine powder instead of larger flakes?

Coffee grinder.
I prefer to ferment mine, but every year I'll devote some to powder. I typically smoke for a few hours, finish in the oven to dry them out, then grind with a coffee grinder.

I also grow super hots every year with Habanero, Butch T Trinidad Scorpion, Ghost, etc. and use many of them to make my own hot sauce, pepper jelly, pepper infused vinegar, pepper flakes and pickled peppers.
I'll also use some when pickling other vegetables to add some kick to things like green beans, okra, pickled sausage and eggs, vegetable medley that includes carrots, cauliflower, onions, celery, garlic and green beans.
