SUCKLING PIG STUFFED WITH JAMBALAYA

Remember going to a wedding before the storm that had a whole suckling pig stuffed with jambalaya. It was great presentation, and tasted great also. Anyone ever had or done this? The reception was catered, and I'm no longer in contact with the couple so that's a dead end. Looking for some one to do this for a party in September, or a recipe that I can do myself. Any help is greatly appreciated.

I was just thinking about this the other day. For a while that was a go to dish of Luke when they would do events. At least that is my recollection of it.

Thank you. I'm on the board a lot, but don't get to post a lot. My job allows me to view boards, but not post. Working from home today, so I'm on my own system. Thanks for the advice.

I’ve done it with a bigger pig. About 40lbs. Had lots of pictures until photbucket shite the bed. Came out great. Also filled the full of sausage, boudin, mushrooms, onions and what not and sewed them up. It’s easy and pretty damn fun. Just have to have a big pit

How much jambalaya did you put in the cavity? Do I need to leave room for swelling? I have done a 25 pounder on my pit and may have been able to do a 30, but it's a small party and a small pig would be more than enough. Thanks.
