Stuffed flounder recipes?

Just got some really nice flounder. I filet'd two of them, and pocketed and de-scaled the other two. Looking to stuff and broil. Any recommendations as far as preparation?

Sauté trinity and garlic in butter. Salt and pepper to taste. Add crushed croutons and lump crab meat. I prefer to actually wrap the filets around the stuffing instead of cutting a slit in the filet. I think it is better to roast at 350 for 20 minutes instead of broiling. A mild cheese like provolone over the top the last few minutes. Paprika looks good on top. Lemon wedges.

You were doing so good before this.
I make my stuffing like my crab cakes, just add shrimp and a little seafood stock to make it more moist than the cakes.

Yeah I'm not a fan of cheese and seafood. I like to add fresh thyme as well.
Last year I used my two day old cornbread dressing leftover from Thanksgiving as a stuffing for 2 big ones my wife caught. We liked it.

Some grocery stores will sell a freshly-made bread-based stuffing with shrimp and crabmeat inside. I would find some of that to put in your flounder.
Top off with some lemon garlic butter (clarified).

I'm not a fan of trinity in a stuffing. I use just shallots.
Melt a stick of butter
Add 3-4 finely diced shallots and saute till clear
Add a toe of minced of garlic and cook till aromatic
add 1 lb of shrimp seasoned with some creole seasoning, cook till pink
add 1 lb of crab meat (I use claw meat, its more flavorful and holds together better) and heat through
If it's wet add some bread crumbs
Let it cool and stuff your flounder
Put a few slices of lemon and pats of butter on top the flounder
Bake at 350 for 20-30 minutes or until the meat starts to flake.
