Spiral stuff pork loin cook time

Interwebs says 25 minutes per pound
Had a large loin probably 2 ft long 7.5 pounds so cut it into loins probably 3-4 lbs
Thinking 1 hour 30-40 minutes
Experts?

Do you have a meat thermometer? 160 degrees.

A good meat thermometer usually just takes 2-3 seconds,,,

I need a good thermometer after 2 hours just pulled it out only said 140 degrees but clearly cooked

This is the idea meat cut isn't too bad
Honestly getting right cook seems to be issue
