Spinoff of the apple thread:
What's your best apple pie recipe, and what's the best apple for it?
I have a cousin in law that makes the best apple pies, but she refuses to give up the recipe. All I know is she peels some of them with a potato peeler before baking.
Mrs. Smith's makes a decent one, but that's not what this board is about.

Depends on where you are from. Granny Smith apples make a fine pie. I will have to see if I can find our recipe.

I think it works best when you use a combination of apples. Typically you want tart and crisp apples that will hold up when you mix them with the cinnamon sugar and bake them. Red delicious are a no no.
After you've sliced and peeled your apples, toss them with your sugar, cinnamon, and cornstarch mixture. The amount of cornstarch used will dictate the runniness of your filling.
This is my go to starting point.

I remember Alton Brown on an episode of Good Eats stating the best pie is from using at least 3 and preferably 5 varieties of apples. In other words, 1 of various varieties to fill out your pie dish.

My recipe
1) Build a fire in your back yard at least 2 hours before starting to make the pie.
2) Dig a hole in the ground sufficient enough to bury your Dutch Oven
Ingredients
6-8 granny smith apples cored and sliced\
1C flour
1/2C white sugar
1/4C brown sugar
1T Cinnamon
1/2T Nutmeg
1/4 t salt
butter
1t vanilla extract
2-3T lemon juice
1 Pie crust (I cheat and use the Pillsbury)
3) In bowl, mix the sliced apples, lemon juice and vanilla extract
4) In a separate bowl, mix the dry ingredients. Then, add dry ingredients into the apple mixture covering the apples.
5) In your dutch oven, line the pot with Crisco. Don't be shy with it. Pour apple and dry ingredient mixture into the pot. Place a few slices of butter over the apple mixture. Cover it with the pie crust. In the crust, cut "1 slice in the crust for steam and 2 more because your momma fixed it that way"
(Props if you know that quote)
6) Place the lid on the pot. Place hot coals from you fire in the bottom of you hole, place the dutch over over the coals, cover the lid of the dutch oven with coals.
7) In 30 minutes, check the coals, rotate the pot 180 degrees
8) After 45-60 minutes total cook time, you should smell the pie. When you do, it's almost ready (about 5 more minutes). Get the ice cream and serve.

CoachChappy, what advantage is there to bake it that way vs putting it in the oven?

1) You get to sit by a fire and drink bourbon while it cooks.

3) Presentation is really cool. It's not something people are accustom to seeing. You can use the dutch oven, follow the recipe, and bake it in the oven if you prefer. But see#'s 1 & 2
4) Instead of pretty little pieces of pie, you get to dig into it with a serving spoon. We spoon it into coffee mugs and place a lump of ice cream on top, and get back to #'s 1 & 2
