Sous Vide Stuffed pork loin

Purchased a 4 pound boneless pork loin, cut into 6 equal slices, approx 2" thick, and made a pocket inside. Stuffed with a wild rice, boudin and finely diced browned tasso. Allowed the rice mixture to cool prior to stuffing inside the loin. Placed the pork pockets in a vacuum sealed bag and sous vide at 135 degrees for 4 hours. Seared off in cast iron pan, smothered in a mushroom and reduced cream sauce and placed on a bed of roasted brussel sprouts and onions. Accompanied with creamed broccoli and fresh baked basil bread. Sous vide sure takes the "heat" out of cooking on the hot summer days! Couple of pics for your review.

I bet that was delicious.

A lean cut like pork loin is perfect for sous vide.

How did you get the rice to cook? When I sous vide rice it just turns into grits.

I cooked the rice prior to stuffing in the raw pork. Just let it cool before stuffing.

I came out really good. I've been impressed with sous vide cooking.

You win the F&D board for the day. Mushroom sauce might have benefited from the addition of Brandy. I'm going to recreate this dish. Cheers!

Thanks and I will definitely try the brandy next time around. The sauce was tasty and complemented the pork well.

It's a good thing you didn't use cream of mushroom soup as your cream sauce.

Sous vide and cream of mushroom soup would have been too much for one thread.
