So you think you know how to make caramel?

I've long contended my aunt's caramel pie is the absolute best thing on the planet and I've failed to recreate it on multiple occasions. After seeing how different preparation methods change the texture and flavor of the caramel I'm 100% sure I haven't stumbled onto her technique. Unfortunately she died 20 years ago. 
I'm going to try a few of these techniques.

I’ve always just put an unopened can of sweetened condensed milk in a pot of boiling water for about 20 minutes.

same, and it doesn't taste remotely as good as the pies she used to make. never realized you could generate so many different caramel flavors & textures.

I do it how my Grandma taught me
3 hours turning can & checking water level every hour
