So I got this weird idea to bake some cookies, I think I'm onto something

I was going to make some peanut butter cookies but I didn't have enough peanut butter yet.

So I had to improvise. I used almond butter instead of the peanut butter in the recipe, then I added some shredded coconut and a good bit of kraken spiced rum.

I haven't baked them yet. I refrigerated the dough and I'm going to cook tomorrow. If the consistency comes out right, I think they're going to be awesome. I know the cookie dough tastes awesome at least.

If I don't eat all the batter I'll let you know

I have the day off tomorrow so I'll probably do it before football starts and get drunk in the middle of the day

I forgot to update

They actually came out really good. But the rum flavor really didn't come through

Really they tasted more like coconut/sugar cookies which were fine. I was really hoping that the spiced rum flavor would come through but it didn't.

I think the problem is that you would have to add too much rum and it would make the batter too moist. That might be why rum cakes work well, because the batter can be more moist.

I might also add that almond butter doesn't have a very strong taste so that sort of gets lost after you bake them as well.

That being said, it might help the consistency of the batter in some way.

I'm going to go back to the drawing board on this eventually. If I can get a more pronounced rum flavor to come out I'll post a recipe. The dough tasted a lot more promising than the cookies, but the cookies were still good :)

You might have to use rum extact. I've never used it but when I've tried to bake with alcohol it never seems to come through, it just leaves.

Good to know. I saw another recipe online that used dark rum but I didn't want to be pouring out my Mount Gay extra old into a batch of cookies.

I'm not that OT baller status just yet
