Yep, it's amazing. Have to trust the internal temp and let it go it's course.

They turned out pretty good only second time I have done beef ribs, like eating Brisket on a handle.

Found some 1/2" K Style short ribs on sale. Monterey Steak Seasoning, 6 hour mesquite smoke, kalbi-glazed on the grill to finish...

Where do you find beef ribs like that? I can't find them anywhere.

Albertson's has them if you ask the butcher for plate ribs.

Sam's has them. They have them cut or the whole 4 rib primal in the back.

These came from Restaurant Depot, however they are not plate ribs as they should be. All I could find were these and they are actually from the shoulder. Also these were graded Select. In a perfect world ask for Plate ribs and Choice grade. These still ate good but plate ribs would have more fat in the muscle and been a little juicier.
