Smoking Pork Belly (2nd attempt)

LINK to my last porkbelly smoke

This time I added a little bourbon to
the rub, vacuum sealed for 2 hours

I always thought you were supposed to smoke it whole unless you were making bacon?

They didn't have any whole (I wanted to get some), so I settled on the sliced again

Rouses usually has pork belly, but they keep it in the back frozen and you need to ask for it, fyi.

I was thinking bacon too .. At least in N.O., Costco always has them whole.

So, correct me if I'm wrong, but isn't sliced pork belly just bacon?

I smoke some bacon every time I fire up the smoker and it's always awesome and super easy.

Last time I drizzled some natural maple syrup on and then rubbed on a mixture of brown sugar and sea salt. Chewy, sweet, smoky...always a hit.

Yep, that's correct. I do that, too. Cure them with different layers of like maple syrup.

It's not sliced like bacon, it's just cut into these long strips.

This came from Costco. The day I go, they didn't have whole slabs

Whenever I do pulled pork now I use the slabs of porkbelly from Costco. Smoke it just like a Boston Butt.



Wrap at about 160°.



Pull at about 205°.
