Smoked Country Style Ribs

I got the Keg 5000 going this morning to heat up and stabilize. The wind is blowing today after the rain storms yesterday and a front coming through last night. Got it stable at 250 degrees and the pork is soaking up some good apple wood smoke.

I seasoned 'em up with some of my Swamp Rub.



Coming along nicely! I'll move 'em to a pan later, drown them with some Bone Suckin' Sauce and put a lid on it to get 'em nice and tender.

Nice!

I've got three racks of baby-backs smoking right now. Rubbed them with some mustard than dusted with my own rub, overnight in the fridge.

Smoking with Cherry and Alderwood in the MES 40. Another 45 minutes they'll go in foil with some apple juice, then the last hour brushed with my spicy sweet BBQ sauce.

They were done earlier but I just ate so........

They came out delicious!



Also made some green beans and potato salad.

Did you buy them on sale at Rouse's for $1.28/lb? I picked up ~6lb earlier tonight. Haven't decided what I'll do with them yet.
