Shrimp Stuffed Portobello Mushrooms

Ala Jacques Pepin. I watched his video on Facebook and made them. This is so darn easy. Delicious! Here's the link. His page is public, so I think anyone can see it even if not on Facebook.

What I did:

I baked the mushrooms trimmings with the mushrooms and included them in the stuffing.

I used 12 shrimp.

I probably used a little more of everything than he did. My mushrooms were large.

I added chopped green onions because I love them.

I used Kerrigold herb butter for the butter and I also put some slivers of that on top of the stuffing before baking

I ate it as an entree with a grape tomato caprese salad. It was filling without being too heavy. Give it a try!

I think the baby portobellos would well too.

My Mom had half of one as a side with steak last night.

Garlic
Green onions if you wish
Olive oil
Butter or Kerrigold herb butter
Baguette (not French bread)

Recipe a little more detailed:

2 portabella mushrooms stem and some of the skirt removed
Olive oil drizzled over mushroom to pre bake
8 large shrimp deveined and coarsely chopped
2 tbsp. chopped parsley
2 cloves garlic chopped
2 tbsp. butter
1 tbsp. olive oil
1/2 cup coarsely chopped baguette
Salt & pepper to taste

Lightly drizzle olive oil over mushrooms and place in the oven 350 degrees 15 to 20 min. to pre cook while preparing stuffing.

Combine all the stuffing ingredients while the mushrooms bake.

Remove mushrooms from oven, stuff with dressing and bake for 15-20 minutes to finish.

That looks awesome. Would be good in a stuffed mirliton too.
