Shrimp stew recipe?

Trying to get rid of some frozen shrimp in my freezer and restock while prices are so low.

Looking for a good brown shrimp stew recipe, no tomatoes please. Whatcha got?

Everybody knows how to cook a pot of shrimp/okra gumbo and I prefer that to shrimp stew...............


Here's the one out of "Talk About Good" a Louisiana based cookbook.

Be forewarned, most shrimp stew recipes call for a mix of a roux and tomato paste as does this one and makes it more like a sauce piquant. Guess you can leave it out if you so desire.

1/2 cup oil
1/4 cup all purpose flour
1 medium onion chopped
1 cup green onions----whole onion, tops and white bottoms
2 cloves garlic minced
1 tbsp. sugar
1 tsp salt
1/2 tsp. black pepper
3 cups water or shrimp stock----I use stock
1 lemon juiced---no seeds
1 bay leaf
dash tabasco
2-3 lbs. raw shrimp

Brown flour in oil, add onions, garlic and tomato paste, stir until paste browns.
Add sugar, salt, pepper, bay leaf, tabasco sauce and lemon juice
Simmer for 1 hour
Add shrimp and simmer for 20 minutes or until shrimp are cooked.
Add more water or shrimp stock if too thick.
Serve over rice.

Roux, trinity, cook down till soft. Add stcok or water to a thin consistency, season, add a bunch of shrimp and cook about 15 minutes. About an hour before adding shrimp add in a few boiled, peeled eggs to soak in the juice. Entire cooking time about 3 hours. Add lots of green onions on top after you put over rice. Serve with a side of cubed boiled potatoes with a dollop of mayo on it, smash em all up with a fork and salt and pepper. Sorry for all the specifics.

Pro Tip: He adds in pre-boiled eggs, instead about 30 minutes before you're ready to serve crack some eggs and drop them straight into the stew. Don't stir of course. An egg poached in a seafood stew that has enveloped some shrimp or crawfish is one of my favorite things to eat and much better than just dropping precooked boiled eggs in

To add to all above make stock from the shrimp peelings, even if you only have a little bit of shells to work with.

It is more than mashing a dollop of mayo on top of boiled potatoes.
