Shrimp Fritters with Lemon Garlic Aioli

Saw this recipe floating around social media. Looked good so I gave it a try. Made some fresh creamed corn and roasted some brussels sprouts with balsamic to serve as sides. Nice meal.

Ingredients
For the Shrimp Cakes/ Fritters:
1 lb large raw shrimp peeled and deveined
4 oz mozzarella cheese (1 1/2 cups shredded)
1 large egg
1/4 cup mayonnaise
2 Tbsp parsley finely chopped, plus more to garnish

1/8 tsp black pepper
1/4 cup all-purpose flour or gluten free flour
2 Tbsp light olive oil or high heat cooking oil of choice

For the Lemon Aioli Sauce:
1/2 cup mayo
1 tsp lemon zest
2 Tbsp lemon juice
1 garlic clove pressed or finely minced

How to Make Shrimp Cakes:
Pat dry shrimp with paper towels then dice into pea-sized pieces.*

Transfer chopped shrimp to a large mixing bowl. Add 4 oz shredded mozzarella, 1 egg, 1/4 cup mayo, 2 Tbsp parsley, 1/2 tsp salt and 1/8 tsp black pepper. Stir together then add 1/4 cup flour and mix until batter is creamy and well combined.

Heat a large non-stick pan over medium heat and add 1 Tbsp olive oil. Add 1 heaping Tablespoon at a time (or a level ice cream scoop) and flatten out the tops of your fritters as you go so they are about 1/2" thick patties. Saute about 3 minutes per side or until golden brown on the edges and cooked through.

How to Make Lemon Aioli Sauce:
In a small bowl, add mayo and stir to remove any lumps. Add 1 tsp lemon zest, 2 Tbsp lemon juice and pressed garlic clove and stir to combine.

Looks good, but you're a brave man to undertake that much dairy + seafood.

Thanks. We used a recipe from Jess Pryles. The recipe is for smoked cream corn but since I wasn't already smoking/grilling we skipped the smoked part. Just cut the corn off the cob, cooked in a skillet, and followed the rest of the recipe.

INSTRUCTIONS

Strip the corn cobs of husks and silks, then use a knife to cut off the kernels. Place the kernels into a foil pan, and use the back of the knife to run along the corn cob and squeeze out any remaining 'corn milk' into the same pan. Season corn well with salt.
Place the pan of corn into a smoker (or a grill set up for smoking), that is running between 250-275f. Smoke the corn for 2 hours, until the top kernels begin to take on slight color.
Add cream, sugar and pepper to the kernels. If desired, add more salt, too. In a large skillet over medium, melt the butter, then add the corn mixture. Stir to make sure all the ingredients are well combined and heated through, about 5 minutes.
Combine the flour and water to make a slurry. Turn heat to low, then add the slurry mix to the corn. It will quickly begin to thicken the mixture. Stir until the whole pan has a similar consistency.
The corn is now ready to serve and enjoy.

A few years back, I posted a similar recipe for a shrimp burger. I haven't made them in a while, but they are very good.




















edited to add:

Recipe copied from my 2013 post

Measurements are approximate and vary every time

20 peeled shrimp
2 Tablespoons Panko crumbs
1 Tablespoon Hellman's
2 teaspoons garlic salt
2 teaspoons Slap Ya Mamma creole seasoning
1 teaspoon black pepper
1 Tablespoon green pepper
1 Tablespoon chopped onion
1 Tablespoon chopped celery
1 egg

Process the shrimp in the small bowl of food processor.
Add the other stuff and mix well. Form patties and pan fry in a touch oil in a sauté pan. Cook until both sides are golden brown.

Serve on butter toasted buns with mayo, lettuce and tomato. Kettle chips are always nice. Cold Beer is always needed.


It would probably improve the taste to add a touch of crab boil oil to mixture but I was out that day. How anyone runs out of crab boil oil I can't imagine.
