Shrimp and Corn Salad

Shrimp & corn Salad

Dressing
1.5 cups sour cream
Juice of 1/2 large lemon
About 1/3 red bell pepper
Smallish shallot
3-4 cloves of garlic (to taste)
Salt/ Pepper

Finely dice veggies and combine ingredients. Stir well. Refrigerate an hour if possible

Peel shrimp, but leave tail ends (if possible). Boil shrimp in a little crab boil. Drain and cool ASAP (I used a big colander to spread them out)
Combine mixed greens with dressing and plate. Top with corn, Cucumbers, then shrimp.



The asparagus were steamed in a little chicken broth, squeeze of lemon, salt and pepper- nothing special, but they were good.

I imagine it's strictly for the look. I would remove them since this is not a dish I'd be eating with my hands. I think shrimp are just as pretty without the tails left on.

Pretty much, although the rest of my plating skills need work, so the tails are probably the least of my worries

Your plate looked just fine. I hope you got every bit of meat out of those tails, though!

Absolutely! I boiled these shrimp absolutely perfectly, so the meat slid out of the tail ends.
