Seafood gumbo combinations

What are your favorite seafood gumbo combinations? I’m looking to try some new additives. I typically do:

Shrimp, duck, crab or just shrimp and crab.

I’m thinking about trying shrimp, crab, and red snapper.

What does everyone else like?

The red snapper will likely flake apart during the boil. I would do a court-bullion (creole red sauce) with the RS and add shrimp. Be sure to use a fish stock.

That’s kind of what I was afraid of. When I do lump crab meat it breaks apart

Fish cooks really quickly. Slide your filets on top and then don’t stir. Do this shortly before serving and then take them out first. They likely will break up some but you actually want them to do so to a degree

I just made a shrimp, crab, okra gumbo this week. 2lbs small 90ct shrimp, 1lb lump crab, 1lb claw meat, 1lb crab fingersand 4 gumbo crabs (which i removed and tossed once the gumbo was complete). I smother my okra down completely before adding to the gumbo to where it becomes a flavor/texture layer of the gumbo, not slimy or chunky (although I do add a can of cut okra for bigger eating pieces).

Heck yeah man. Small shrimp rock in gumbo. Tender and a shrimp in every bite. You can keep all the big shrimp. I want shrimp and crab in every bite. I actually use more small shrimp in dishes than big shrimp. Big ones are for frying and boiling. 50ct and smaller are for soups, pastas, etc.
