That takes alot of drive on his part to do such a thing. From what little I know about chefs, the kitchen is a very demanding and stressful place that requires long hours. This guy wants to go work even harder on his off time.

Guess that is why he is the best in N.O. right now.

I only know Per Se by rep, never been. Daniel is another big gun. All of NOLA's top chefs are at the Murphy benefit, which is admirable, SB is washing dishes at Daniel just to get any second with him that he can even thought Stella! is killing it right now. That pretty much sums up why he is NOLA's shooting star and is why I always tell people from out of town to go there. I want tourists to have a great experience and come back. I can count on Stella! and Central Grocery, those are the two spots that I pimp out.

negative.

but had the chance to taste some food prepped by their chef at the time (around 2002) at a work function. It was mindblowing.
