I guess that depends on what kind you get. I may have my terminology wrong, but the Texas reds are always going to be small, but I like them. Then the other one I hear used is Virginia whites. These are the ones that get really big later in the season. Love those things.
Guess I'm going to google a little bit today and read up on the different kinds and where they come from.

One thing I hope we can all agree on..... The peanuts that come out of the cans that sit in the warmer pots all day long at the gas station are garbage.

Basically raw are the dried out peanuts that you can buy and roast yourself. Has a long shelf life and is usually in plastic sealed bags all year round.

Green are freshly picked and still moist on the inside. These would be just sitting in bins or whatever at the markets out loose.

My tip is to not leave them unattended. Me and my roommate almost set our apartment complex on fire in my college days. have never attempted to boil peanuts since.

After giving this thread some thought, I went to my store room and found a Mirro 22 Qt pressure cooker I bought for canning and also doing whole turkeys. After measuring it I calculate I can easily cook 10 lbs of jumbo peanuts in it this fall. Under pressure for 35 min then let cool. I'll be freezing some gallon bags of boiled peanuts.

In gallon bags, but add the juice with them or they will be tough when you reheat them. Otherwise they reheat really well.

Try a produce stand, if you have one in that area. That's where I get mine in BR.

Also, to my other boilers out there... I picked up some fresh green peanuts two days ago. Just got around to boiling them today. I noticed that several had actually started sprouting. Somehow I've never seen this before. Will it affect the taste of those peanuts? Do I need to pick out the sprouted ones?

ETA: The sprouted ones taste fine. They just look weird.

Update. Mother in law brought me 4 lbs. He neighbor had some frozen.

First round is in the pressure cooker with 1/4 cup salt and 1/4 cup crab boil.

We will see what happens!
