Just made a batch of hot sausage(came out too hot). While perusing the internet for recipes found a lot of videos and recipes that add water to the final mix, sometimes a lot!
Do you know a reason for this?

I think people use ice water as a bonding agent of sorts

It makes it easier to stuff into the casings.

To get the moisture levels right for the recipe. Also, as those guys ^^^ said, some people add ice instead, but that's because the cold keeps the fats more solid and easier to work with. Then when the ice melts, it adds the moisture.

I've also heard of people using apple juice and frozen apple juice instead for added flavor.

I had no problem with stuffing into casings, just wondered if there was any REAL advantage. Any good recipes out there?
