Sacalait recipes

I have a couple of packs of sacalait filets in the freezer caught at Toledo Bend a few months ago. I usually fry them but looking for other ways to cook. Thinking about making fish cakes. Anyone have any recipes to share? Thanks.

I would not use a quality fish like Sac aux lait for fish cakes. Reserve that for drum, garfish or choupique.

Pan fry them and eat them with a little cream sauce over some roasted corn grits.

I made some sacalait ceviche using the MeatChurch recipe.

It was okay, but it's better to batter and fry it.
