Just had an easy top 3 link of boudin.
Skin wasn't mealy. At least 30% meat. Good spice.
Will report back on their sausage. I bought a link of every type.

A good selection of butcher beef. Seasoning is decent.

Boudin ball was meh. Really good boudin, but breading was too heavy with too little spice and salt.
I think a bit of garlic or celery salt in the batter would make them better.8

About a week ago I tried the boudin ball and thought it was pretty good. The most notable thing about it to me was the thin breading. Looks like they might have a consistency problem.
I tried the hog head cheese too. I thought it was good, but I prefer Benoits in Addis.
Tried the cracklings. I only had one bite but I liked it. I wouldn't be afraid to try any of their stuff.

I can report that all but the cajun sausage is awesome.
A little fatty, but smoking it would fix that.

My grandma used to make many boudin balls at benoits.
