RIP Mr Wallace Johnson of Johnson's Boucaniere

Mr. Wallace Johnson, who started Johnson's Grocery and Meat Market in Eunice, La and continued boudin, and sausage making and traditional Cajun cooking at Johnson's Boucaniere in Lafayette, passed away last night. Mr. Wallace was one of the kindest, most humble Cajun men in the business and will be missed by his customers and all of his family and friends.
Rest in Peace , Mr. Wallace.

Saw they were putting him on home hospice care a few weeks ago. RIP Mr. Wallace. Best boudin link out there

I remember him working at the LAF store until a few weeks ago. RIP Sir and thx for a quality food product

Sorry to hear of this.
He was kind gentleman who took my order many times.
Sadly, he was a bit hard of hearing, and I hated having to raise my voice to him just to place my order.

Stopped in years ago on a long drive to Houston with my family for lunch. He took the time to visit with us and explained how he stuffed garlic cloves in the pork roast and how he cooked it.
