Rinsed Rice for Jambalaya question.

I'm one that prefers to wash/rinse the starch off my rice for jambalaya
(5lbs/5gal pot).
when cooking at home its easy to rinse just prior (minutes) to when the rice needs to be added to the pot.
I've used not rinsed rice if cooking when camping or somewhere it's a pain in the arse to rinse and its all still good, just curious as to if you were to rinse/wash rice to be used later in the day (like 6-8 hours later) would that affect the rice and come out all jacked up and not worth the risk?

I don't ever rinse my rice. I like to have the rice stick together. I think it has a better mouth-feel.This is one reason I dislike par-boiled rice.

I'm not really sure why anyone rinses rice to be honest

I rinse it to get the starch off as I like individual grains. That said I do not rinse jambalaya rice as I think it needs to be just a tad sticky. But I can’t cook jambalaya to save my arse so I’m not the authority.
To the OP, rinsing and waiting until later won’t hurt anything. I would just make sure it’s as dry as you can get it because it will fermint eventually.

From the "Tips" tab in the jambalaya calculator:
Some chefs like to wash the rice to remove the starch so the rice is even less likely to become sticky and mushy. If your rice turns out mushy, you may need to skim off excess grease after you add the liquid.

If you want individual grains just wait until most of water is gone before putting lid on. Gummier jambalaya put lid on sooner

If you like rinsed rice you should try some parboiled rice. I think it will be what you are looking for.
