That will be how I go after seeing that test in the link posted a page back.
I’d still like to know, if anyone reading this knows, if freezing stops that process. For instance I’d like to have a few patties or steaks seasoned up and vac packed in my freezer ready to go into the SV.
If not I will try cooking them SV and then freezing them and then just have to thaw and sear. Not sure if that would change how good they come out
