Here's the deal -- as a business owner, you have to be abreast of the context in which you are immersed. For Red's, they realize that many people that are patrons there are sensitive to cultural issues. So they made a name shift to cater to that demographic. Wow, how horrid. God forbid someone do something to maximize their revenue.
But as for the other, the cocktail that directly references the slave trade -- is that really what you want to base your revenue upon? But specifically, as conscious consumers we tend survey the ingredients, think about how they will come together, and then order based upon that. I can't tell you the name of any cocktail I've had at any of the wonderful cocktail bars in this city. But if it were named KKK Punch, yeah, I'm not ordering that shite. Kudos to them for being aware of the social milieu in which they are immersed.

I'd call my establishment Mr. Bojangles' Black Face Minstrel Mother fricking Donkey Show if it meant that it was generating revenue and I was serving a product I deemed acceptable. Names are stupid. If you're butthurt over this you need a life. At the end of the day product is the most important, sure. But names are so transitive. You can easily adapt to ensure the bottom line/
