red boudin/blood boudin/boudin blanc

I've never had it, but I plan on trying some tomorrow at Cafe Degas... is it similar to regular boudin? What is the difference in taste? If I like it, I plan on going to Bourgeois' Meat Market in Thibodaux to buy some more...

I havent seen blood boudin in years, I had it a few times as a child. Its okay, I prefer regular boudin. I was always told the FDA limited the sale of blood boudin, prohibiting it from sale?

The real blood boudin is really hard to find...there were some small country stores between lafayette and new iberia...but i have not had any in years...FDA said no to it's sale.

The only way you can prepare it is if the inspector is there when you make it, so that he can verify that you do it right.
