Add chicken stock to the pot instead of water when cooking down.

Go to rouses and get your smoked pork shank to add in the beans. Best advice I ever got. Bypass the ham hock.

Also, many dried grain and legume producers are integrating mechanical vision and air knives to remove off color pieces, non-food pieces, stalks and stems, broken pieces, etc.
