Red Bean Gumbo Recipe

I know there are some St. James Parish locals on this board and nobody can pull off a red bean gumbo like you folks. I've experienced the awesomeness of the Gumbo Cook Off at the Bonfire Festival and have attempted to make it on my own, but continuously fail (miserably).

So, how do you guys make it? Basic outline would be fantastic! Thanks in advance!

I have relatives from St James parish and have eaten their red bean gumbo many times. It's awesome!

The Folse recipe above is closer to what you're looking for.

The recipe that Rat posted has red beans in it but that is NOT what you want. Collard greens and mushrooms?

I'm from St. James Parish and my family makes this all the time. The John Folse recipe is a good guideline and even better if you use leftover homemade red beans and smoked sausage and tasso from Veron's Supermarket in Lutcher. When I make red beans I freeze a few containers just to make gumbo later.

This recipe is close to ones I have seen.

It should look like this when done. Minus the mess!

Here is the recipe from the "Festival of the Bonfires Traditions" cookbook. The instructions for the large batch are the same as for the small batch.

Why the Rotel and Lea and Perrins? That threw me for a loop. Neither of those go in red beans and rice or gumbo.

The one in the OP sounds better.
