It's a little long but very interesting. He talks about being at K-Paul's when PP first blackened fish as well as how he first came to work at Commander's Palace with PP, having no experience in cooking or restaurants. There were no recipes. FB learned things from him over the phone and was cooking in K-Paul's by himself, pretty much, while PP was still working at Commander's before he moved to K-Paul's.

Watching him debone a turkey, duck, and chicken is a modern art masterpiece.

I follow him, also. Definitely posts some quirky stuff and I know more about his dog, Bella, than I need to, but I don't skip his posts, particularly on food. He's got a bright personality and is a funny quirky talented guy who started out with no culinary training at all.

He posted some good stories when PP passed away. The story about being hired by him and how that panned out was a good one. I laughed out loud at the story of Dom Deluise donning PP's attire and sitting at the PP's table at the back of the restaurant signing his cookbooks for an entire day without anyone knowing he wasn't PP.

There was a story on the advent of blackening on nola.com yesterday, I believe. I can't recall whether I read it in the story or heard it in the interview, but Brigtsen was talking about how PP was passing out pieces of blackened fish in the restaurant to taste when he first created it. Then, he told Brigtsen to try to blacken all manner of things, some of which worked and some of which did not. Out of the testing, "bronzing" was born for some things which didn't blacken well.
