Poached, with or with out anything. Below is my favorite with creamy grits.

Sunny side up
Poached
Over medium
Soft boiled/poached in crawfish water
Hard Boiled
Scrambled

Funny you mention Scotch egg. Wife and I made some last year with elk breakfast sausage. It was of the charts good. Took several tried to get the egg runny.

Non stock pan with butter

Low heat

Salt and pepper

Cover with glass lid

Cook to your choice of soft to hard

I do it soft without clear running’s

Pretty close to a poached or soft boiled with added flavor

Covering them cooks the top gently without having to flip them.
